This Lasagna Soup combines all the flavors of traditional lasagna in a comforting, soup form. It’s perfect for a cozy dinner on a chilly evening, rich in flavor and easy to put together. Serve with crusty Italian bread and a green salad.

Lasagna Soup Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 can (28 ounces) crushed tomatoes
  • 6 cups beef broth
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup finely grated Parmesan cheese
  • 1 cup ricotta cheese
  • Fresh basil leaves, for garnish

Instructions:

  1. Cook the Ground Beef:
    • In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Add Aromatics:
    • To the same pot, add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic, oregano, basil, red pepper flakes (if using), salt, and pepper. Stir and cook for about 1 minute, until fragrant.
  3. Combine with Tomatoes and Broth:
    • Pour in the crushed tomatoes and beef broth. Stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for about 20 minutes to blend the flavors.
  4. Cook the Noodles:
    • Add the broken lasagna noodles to the pot and increase the heat to medium. Cook for 10-12 minutes, or until the noodles are tender.
  5. Final Touches:
    • Stir in the Parmesan cheese until melted and well incorporated. Taste and adjust seasoning as needed.
  6. Serve:
    • Ladle the soup into bowls. Top each serving with a dollop of ricotta cheese and a sprinkle of fresh basil.
  7. Enjoy:
    • Serve hot, with extra Parmesan cheese and crusty bread on the side if desired.
