This Lasagna Soup combines all the flavors of traditional lasagna in a comforting, soup form. It’s perfect for a cozy dinner on a chilly evening, rich in flavor and easy to put together. Serve with crusty Italian bread and a green salad.
Lasagna Soup Recipe
Ingredients:
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- 1 can (28 ounces) crushed tomatoes
- 6 cups beef broth
- 8 lasagna noodles, broken into pieces
- 1/2 cup finely grated Parmesan cheese
- 1 cup ricotta cheese
- Fresh basil leaves, for garnish
Instructions:
- Cook the Ground Beef:
- In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
- Add Aromatics:
- To the same pot, add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic, oregano, basil, red pepper flakes (if using), salt, and pepper. Stir and cook for about 1 minute, until fragrant.
- Combine with Tomatoes and Broth:
- Pour in the crushed tomatoes and beef broth. Stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for about 20 minutes to blend the flavors.
- Cook the Noodles:
- Add the broken lasagna noodles to the pot and increase the heat to medium. Cook for 10-12 minutes, or until the noodles are tender.
- Final Touches:
- Stir in the Parmesan cheese until melted and well incorporated. Taste and adjust seasoning as needed.
- Serve:
- Ladle the soup into bowls. Top each serving with a dollop of ricotta cheese and a sprinkle of fresh basil.
- Enjoy:
- Serve hot, with extra Parmesan cheese and crusty bread on the side if desired.
