Springtime is asparagus time, and this recipe makes the most of the season. Using just a handful of ingredients, you’ll easily create a delicious dish that comes together in a snap.
Pasta with Asparagus Recipe
Ingredients:
- 1 lb. pasta (such as penne or fettuccine)
- Approx. 1 lb. fresh asparagus, trimmed and cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper, to taste
- 1/4 cup grated Parmesan cheese
- Optional: red pepper flakes, lemon zest, or fresh herbs (chives, parsley, fresh basil or oregano all work well)
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- Prepare the Asparagus:
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for about 1 minute until fragrant.
- Add the asparagus to the skillet, season with salt and pepper, and cook for about 3-5 minutes until tender but still crisp.
- Combine Pasta and Asparagus:
- Add the drained pasta to the skillet with the asparagus. Toss everything together, adding a little reserved pasta water if the mixture seems dry.
- Cook for an additional 1-2 minutes, allowing the flavors to meld.
- Finish and Serve:
- Remove from heat and stir in the grated Parmesan cheese. Adjust seasoning with more salt and pepper if needed.
- Serve hot, garnished with optional red pepper flakes, lemon zest, or chopped fresh herbs.
