Corned Beef Tacos Recipe

Ingredients:

  • 12 soft corn tortillas
  • 2 cups cooked corned beef, shredded
  • 2 cups cabbage, finely shredded
  • 1 cup carrots, finely shredded
  • 1/2 cup cilantro, chopped
  • 2 limes, one juiced and one cut into wedges
  • For the Spicy Mustard Sauce:
    • 1/4 cup mayonnaise
    • 1 tablespoon Dijon mustard
    • 1 tablespoon grainy mustard
    • 1 teaspoon hot sauce (adjust to taste)
    • Salt and pepper to taste

Instructions:

  1. Prepare the Spicy Mustard Sauce: In a small bowl, whisk together mayonnaise, Dijon mustard, grainy mustard, hot sauce, salt, and pepper. Adjust the hot sauce according to your preference for heat. Set aside.
  2. Make the Slaw: In a large bowl, combine the shredded cabbage, carrots, and half of the chopped cilantro. Squeeze the juice of one lime over the mixture and toss well. Season with salt and pepper to taste. Let it sit for a few minutes to marinate.
  3. Warm the Tortillas: Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are warm and pliable. Keep them warm by wrapping in a clean kitchen towel.
  4. Assemble the Tacos: Lay out the warm tortillas and evenly distribute the shredded corned beef among them. Top with a generous amount of the slaw.
  5. Add the Sauce and Garnishes: Drizzle the spicy mustard sauce over the slaw-topped tacos. Garnish with the remaining chopped cilantro.
